Sigma produces and sells cooked and dry hams and sausages, bologna, and bacon among other products. Our brands are widely known among consumers, since they are focused on satisfying the needs in each segment of the selected market. Some of them have more than 70 years of tradition.
Set the oven in 375ªF. Boil the fresh spinach leaves with a little water and salt until they reduce. Take them out of the water and dry with a towel. Once they are dry, cut into small pieces, mix very well with cottage cheese and add salt and pepper to taste. Cover the bottom of pan with tomato sauce. Cut the ham in slices similar to the lasagna sheets. Spread a bit of the cottage cheese and spinach on the pasta and top with a slice of ham. Carefully roll the pasta until if forms a small roll; place on mold and cover with more tomato sauce. Spread with shredded gouda cheese and cover with aluminum paper. Place in previously heated oven during 30 minutes, remove the aluminum paper and bake for 15 more minutes so the cheese melts and the pasta browns.
Peel the poblano peppers, remove seeds and cut into slices. Fry the onions with the margarine, when they are soft and clear add the pepper slices, salt, oregano and epazote: let cook for three minutes. Add tomato sauce and let boil for five minutes. Serve pepper slices and spread with panela cheese as well as cream. Serve with refried beans and hot tortillas
